This afternoon I finally had a chance to make this soup that I sort of have been gawking at lately because it looks so amazing! Now, mine may not look that amazing, but it feels nice in the belly and that is what counts!
The scent of the tomatoes and garlic made its way downstairs and into my nose as they were roasting away. Might I add that those roasted toms are attractive looking things? I picked them up from the Farmers Market last weekend and they were all so perfect.
This soup is easy-peasy and delicious! I got a bit carried away with the red pepper flakes and I also added about a quarter cup of cream just for kicks!
Family photos are booking up my next few weekends so keep your eyes open.
